Beth, I just found a nice, short video that DSD put out 5 years ago (but still valid), link below. It confirms that the reserved keyword feature is what you can use to only have documents tagged with the reserved keyword be sent with the paperless email delivery.

Beth - you will need to assign a tag (word/words) to the document using a Reserved Word Tag, with the enabling of tagging documents option selected. Then only those with a tag will get emailed.
