We have a client who is migrating to a Dynamics 365 system but asked if there was an option to "scale down our licensing to retain access".
My reply was: "In theory, when you stop paying for your Sage subscription the software goes to "Read-Only" mode. Read only mode should let you run reports and access the data, without allowing you to enter new data." However, I also suggested they check with Sage.
They wrote back that: "I called SAGE directly and they confirmed your comments".
That's as close to anything official I have from Sage. This was a little less then 2 months ago. Of course Sage can always change their minds.

Payroll subscription expiration date is incorrect
I haven't heard from anyone who said that their Payroll module disappeared after the payroll expired.
And the above KB seems to say that you can still access and print payroll information:
For customers without a Payroll Subscription, there is a 45 day grace period after the payroll expiration date. Processing Payroll will no longer be available to process without a Payroll Subscription. Historical data will be available for read-only access. Customers must download and install the appropriate version Hotfix listed on knowledge article 82689
I cannot say if Sage might change the above behavior without advanced notice. I have had one customer where payroll expired and the module still showed and at the time we were still able to use ODBC to connect to payroll data. I don't do much with expired payroll so I can't say for sure whether this might have changed.
