I just completed my first Go Live on new PR (v2019.1 w/ PR 2.19.3.  Prior to re-migration, I had backed up PR_EarningsCode, PR_DeductionCode, PR_Department, PR_CompanyTaxGroup & PR_CompanyTaxGroupRates.  After migration, I replaced these files, but when I converted the data, I still needed to key in some marital status configuration and re-key the tax rules in Earnings & Deduction Code Maintenance.  Did I not get the procedure right?  I was expecting not to have to re-key any of the configuration options again.

Also, I had made some notes from a Sage roundtable that during conversion, there are some mapping .txt files that get written to ..\Home\textout, but I couldn't find any.

I believe you will need to enter the marital status info, then proceed with the conversion and then copy those files into the MAS_XXX directory.  That is how I have done it in the past.

Yes, convert data first and then copy in saved files.  Below is my procedure:

After data conversion, rename the standard and copy PR_CompanyTaxGroup, PR_CompanyTaxGroupRates, PR_DeductionCode and PR_EarningsCode files by company that were saved once the testing was completed.

In addition to the above files, I also save copies of the following files and copy the saved files in after the data conversion.

Rename the standard files and copy in the saved files for tax profiles from MAS_SYSTEM:  PR_TaxProfile, PR_TaxProfileLocation and PR_TaxProfileDetail.
