With a UoM project in the past I recall changing UoM after quantity is set will recalculate quantity and unit $'s (according to the conversion rate). If you open up that field for editing, be sure of the quantities and $ amounts.
We usually set up the conversion rates and let the business objects work normally.
"Case" size can differ item by item so using a naming convention like "C12" = case of 12, "C24" = case of 24... allows UoM conversion maintenance settings to work for multiple items.

We can open up the field for them but the client specifically wants to know the reason behind it, especially because it is available in the Sales Order module.
