Paperless Office emailing of invoices - are the actually email addresses logged for each email somewhere?

No. We recommend clients create one or more email addresses, or a distribution group, and add as recipient to capture sent mail.

Ditto with my clients. Set up a paperless@company.com and include the address on everything.

I've probably mentioned this before a bunch - but I always recommend SMTP2GO.com if they use that service it logs and records all emails. Provides a lot of other features and reporting too. Well worth it for people using paperless office.
