Easiest thing to do would be to test using their largest number of email addresses.
If there was a limit, I'd guess it to be based on the number of characters Sage can handle when concatenating the multiple addresses together (from customer / transaction / additional / contacts / SP...).
Worst case, configure the offending customers to email internally, and forward on to the final destination the same way they are doing now.

From the Customer setup. It's for a prospect. They keep a spreadsheet of emails then PDF the invoice and manually email them! (This is not Sage 100, BTW.)
