Without needing authentication enforced (by using an open SMTP connection) the From address is not an override. With Oauth, the authorization credentials are the technical "from" address, with what the user sees (as From) being controlled by the Paperless From address.
I added this as an idea a couple years ago for this exact reason... and I think Sage said "no".

I got more details from customer....
Sage 100 2023. published app. I have verified all mailboxes are shared mailboxes, and the Sage users have full permissions to the shared mailboxes, and SMTP Authentication is enabled. I also verified the Sent Items copy to mailbox and copy to mailbox on behalf is enabled. The only issue we have experienced is when they send an email from Sage it will send a copy to the user's sent items but does not show as sent items in the AP or AR mailboxes.
Using Basic authentication the emails saved to the Sent folder of the AP account, but using OAuth, they save to the Sent folder of the actual User Sally Smith's Sent email.
Has anyone heard any similar complaints?

So it actually sends as the main email but can look like it is coming from AP@. So it would not appear in the Sent email of the AP account.

I am pretty sure the company maintenance field is the mailbox used for the outgoing emails, with "send as" email permission allowing override of the "from" address (what the email receiver sees).
