The primary reason why I'm asking about the version is due to a change that Microsoft made on their end that created a large disruption to Sage CRM's capability to fully integrate with Exchange. That same issue also created severe bloating to log files. This change occurred while Sage CRM 2017 was released about a year and a half ago. Microsoft decided it was going to alter how it allowed external resources to access and integrate to the Contacts piece of Exchange. Sage was able to modify the integration, but it didn't release a stand-alone patch just for that bug. Sage CRM systems had to be installed to version 2018 R1 or later in order to get the fix for contact synchronization.
TL;DR version: If your client is using any version prior to Sage CRM 2018 R1, your best bet to fix the bloating log issue is to disable the Exchange Synchronization of Contacts within Sage CRM. The log files likely contain the recurring errors for each user's mailbox rejecting the update/addition of contacts.

1) What version of Sage CRM is your customer using?
2) Have you investigated or opened the log files to see what they're capturing?
