Does anyone know if it's possible to default the desktop choice to Classic during first time launch of Sage 2018. Client I'm working with wants users to only use classic. I know we can prevent users from changing user settings in role maintenance but not sure if there's a way to only allow Classic.

Modify Role Maintenence. LM, Maintenance/Data Entry, User Settings. You cant set a default but you can prevent a user from changing the UI once it has been set to classic.

A workaround to set a default desktop is to have a default bootstrap.json file for each workstation. In the documents\Sage 100 folder of each user's workstation there is a bootstrap.json file, Change the ""Selection"" parameter to 0 for classic and to 1 for standard.

It would be helpful if there was a central control panel to set these workstation options. Larger sites ask for this type of standardization quite a bit.
